Dairy in Schull

Gubbeen Farmhouse Products are foods from the land.

Gubbeen is a family run farm in Schull where the Fergusons have farmed for 5 generations - mostly dairy; in the 70s Gubbeen Cheese was started by Tom and Giana, over the years the cheeses have developed to use all the milk from Tom's herd with the bi-product - the whey - now used to feed the pigs that are reared at the farm for Fingal's Charcuterie. The sows are out during the summer months, coming in to farrow. Their young are reared on then in large airy straw filled pens in family groups.

Clovisse runs the gardens at Gubbeen, growing bio-dynamically the herbs for the cures in the Smokehouse and also in her 4 tunnels a large range of leaves and vegetables for local restaurants and cafes with all the surplus going to the local Farmers Markets where the Gubbeen Stand can be found every week in Skibbereen, Schull, Bantry and Mahon Point.

The heart of the Ferguson's work motive is to produce food from their farm that is local, seasonal, delicious and fresh. They currently employ 20 people at the farm.
